Head Butcher - Poultry Wholesaler

We are seeking an experienced and skilled Head Butcher to lead our cutting and processing operations within our busy poultry wholesale business. The Head Butcher will be responsible for overseeing the preparation, cutting, and packaging of poultry products to meet quality and safety standards. The ideal candidate will have strong leadership abilities, excellent knowledge of poultry processing, and a commitment to maintaining the highest levels of hygiene, safety, and product quality.

Key Responsibilities:

- Lead and manage the butchery and processing staff, ensuring efficient workflow, adherence to protocols, and effective communication.

- Train new staff members in proper cutting techniques, safety procedures, and hygiene standards.

- Must have a positive and productive work environment that encourages teamwork and skill development.

  • Cutting and Processing

- Oversee the precise cutting, trimming, and portioning of various poultry products to meet customer specifications and demands.

- Ensure that all poultry is processed efficiently, minimizing waste and maximizing yield.

- Monitor quality and consistency of cuts, ensuring that products meet established standards.

  • Quality Control

- Implement and maintain quality control measures to guarantee that all poultry products meet safety and quality standards.

- Monitor and address any deviations from quality standards, taking corrective actions as needed.

- Conduct regular inspections of equipment, tools, and workstations to ensure cleanliness and functionality.

  • Safety and Hygiene

- Enforce strict safety protocols and sanitation guidelines to prevent accidents and cross-contamination.

- Provide training to staff on proper handling, storage, and disposal of poultry products to maintain a safe and sanitary work environment.

- Ensure compliance with health and safety regulations and maintain records related to safety training and incidents.

  • Inventory Management

- Collaborate with management to forecast poultry product demand and plan cutting schedules accordingly.

- Monitor inventory levels, recommend reorder quantities, and assist in managing stock rotation to minimize waste.

Qualifications

- High school diploma or equivalent; formal culinary or butchering training is preferred.

- Several years of experience in a poultry butchering role, with a proven track record of leadership and supervision.

- In-depth knowledge of poultry anatomy, cuts, and processing techniques.

- Strong understanding of food safety regulations and hygiene practices.

- Excellent organizational skills and the ability to manage multiple tasks simultaneously.

- Effective communication and interpersonal skills to lead and collaborate with a diverse team.

- Physical stamina to perform repetitive tasks and stand for extended periods.

- Attention to detail and commitment to maintaining high product quality standards.
